Spike Your Sweets With Boozy Baileys Brownies

St. Patrick's Day is right around the corner, folks. And guess what? We're about to (sham)rock your world with layered boozy brownies... spiked with Baileys! Say what now? Read on for the recipe.

Ingredients:

  • 4 sticks salted butter, softened
  • 10 ounces bittersweet chocolate chips
  • 2 cups granulated sugar
  • 4 eggs
  • 1 tablespoon vanilla
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 3 tablespoons cocoa powder
  • 2 cups powdered sugar
  • 1/3 cup + 2 tablespoons Baileys Irish Cream
  • green food coloring
  • 2 cups semisweet chocolate chips

Instructions:

  1. Preheat oven to 350 degrees F. Grease a 9×13 baking pan and line with parchment paper. In a large bowl, combine 2 sticks melted butter with chocolate chips. Whisk until melted. Add 2 cups sugar, 4 eggs, and vanilla. Whisk together. Fold in the flour, baking powder and cocoa powder.
  2. Spread brownie batter in the baking dish. Bake 45-50 minutes. Cool completely.
  3. In a large bowl, whisk together 1 stick softened butter, powdered sugar, 1/3 cup Baileys and green food coloring. Evenly spread the Baileys frosting over the cooled brownies. Refrigerate brownies for 45-60 minutes.
  4. In a microwave-safe bowl, melt 1 stick of butter with 2 cups semisweet chocolate chips. Whisk together. Add 2 tablespoons Baileys. Spread the chocolate mixture over the green frosting. Chill in the fridge for 1 hour to set the chocolate.
  5. Cut into squares and enjoy!
