The incredible, edible egg. Whether it is a boozy brunch with the ladies or a late-night three-egg omelet at the Greek diner, I'm a fan. And the best thing is, the moment you pick up a six-pack of eggs in the styrofoam container at the corner shop, your options are limitless.

While the eggs are important, the real stars of the day are the briny sundried tomatoes and earthy shiitake mushrooms. Edamame adds some texture and obvious health benefits. I love quiche - and making it without the crust just leaves more room to stack the eggy mixture tall.

This delicate egg custard requires very little from you other than keeping your eye on the clock as the steamer does its trick. The mushrooms in the mixture and the sauce you finish your ramekins with will ensure a smooth and flavorful umami filled egg experience!

Yeah - I know. This is pretty basic stuff. But what separates this scrambled egg recipe from tossing a couple huevos in the pan and running a fork through them is liberal (read: gluttonous) use of butter, extremely low heat and constant whisking. The result is luxurious and super soft. Add some tomato hearts if you're so inclined, loverboy!

Japanese hot spring eggs go well with almost anything. One of my favorites is a bowl of gyūdon with the slow poached egg yolk tempering the savory notes of the beef and onions. My other fave is this much healthier, but no less tasty, dish - with tofu and peppery arugula.

Marinate boiled eggs in soy sauce, sake and rice wine vinegar for some salty, tangy goodness. Pair these bad boys with hot mustard or Sriracha mayo - or toss them in a steaming bowl of ramen. Every time I make a batch, I have to hide them from my ravenous, egg crazed husband!
